【Japanese Cooking】Basil KOJI

In this video, I shared how to make Rice Koji and Soy sauce Koji.

Today I would like to share another version of Koji seasoning.

Basic Koji

Fresh basil 1oz
Rice Koji 3oz
Salt 1oz
Water 3-4oz

Step 1

Chop fresh basip

Step 2

Mix basil, Rice Koji, salt, 3oz of water in a clean jar.

Step 3

Make sure rice and basil is covered with water.

Step 4

Keep it at room temperature and mix once a week for 10 days.

Step 5

After 10days, keep it in a refrigerator.

The Basil Koji is great for stir-frying and soup!
